Acai Berry Bowl

While on vacation in Steamboat Springs this past weekend, my 15 year old daughter found a new love…ACAI! With every bite of this beautiful bowl her eyes lit up with excitement. As a matter a fact she talked about the acai bowl for many many days. Obviously, I wanted to bank on her new found love for this dish packed with yummy goodness. So I decided to do what any mother would, I recreated the bowl! The most amazing thing is, not only does she love eating this power packed bowl, she actually has fun making it too. Art and Food… Win! Win!

Acai Energy Bowl (2 servings)

  • 1 pack of frozen acai puree’ (unsweetened) 
  • 1 frozen banana
  • ½ cup almond milk (unsweetened)
  • 1 kiwi
  • 1 apple
  • ½ banana
  • A handful of blueberries and strawberries
  • ½ cup of organic granola
  • Dash of cinnamon

Directions 

In a food processor/blender combine 1 pack of the acai, 1 frozen banana, almond milk and dash of cinnamon and blend on high for 15 seconds. Pour half of the mixture in one bowl and half in another bowl.  Add toppings! Arrange: kiwi, apple, berries, banana, and granola. Enjoy!
